Ghayour presents a sweet and sour, spicy chicken that goes well with crispy fried potatoes and spring onions glazed with apricot. The chef uses this exact cooking method to prepare any variety of oven-roasted chicken, combining basic pantry ingredients with fresh lime juice to intensify the flavour.

Ghayour says she enjoys hash browns, röstis and latkes, any variety of crispy fried potatoes. However, she acknowledges that she does not like frying, as the process is messy, greasy, smelly and consumes quite a lot of oil, which is costly.

The chef notes that she has managed to produce a perfectly crispy latke by baking it instead of frying it. Ghayour expressed that she is really satisfied with the results of this preparation method.
