Pickled aubergine is one of the most popular condiments, adding a strong and distinctive flavour to the table, especially with traditional dishes. It can be prepared at home with simple ingredients, adjusting the amount of salt, vinegar and spices according to your preferences.

Wash the aubergines thoroughly and remove the green part, leaving the fruit intact. Boil in hot water until tender, but without falling apart.

Remove the aubergines from the water, let them cool and drain well of excess liquid. You can press them gently to remove as much water as possible.

In a bowl, mix chopped garlic with green pepper, red tomato, cumin, coriander, chilli and salt. Add vinegar, lemon juice, water and oil, and stir the ingredients until fully combined.

Cut each aubergine in half without separating it into two parts, and insert an appropriate amount of the garlic and pepper mixture inside. Place the aubergines in a clean, tightly sealed container, pour the remaining dressing on top and refrigerate for several hours so they absorb the flavours.
